Start with a skeletal reconstruction.  Put muscles and skin on it.
Articulate the joints and rotate the animal in three dimensions until
you have an interesting posture.  Observation of living animals helps
here.  Go to a zoo and sketch, or look through a National Geographic for
pictures of animals doing interesting things (be warned that dinosaurs
were not always physically capable of doing some of the things mammals
and birds do, however).

Books to look at are _Predatory Dinosaurs of the World_ by Gregory S.
Paul and anything with Douglas Henderson's work in it.  Books like
_Dinosaurs, a Global View_ are fun, as they show the work of many
artists.
