Operating under the assumption that the reason so few sauropod heads
have been preserved is that they were the tastiest things in the
Mesozoic,

That assumption is not necessary (the head being smaller than most neck and back vertebrae, and only connected to the rest by ligaments and the like), and in fact difficult. A sauropod head is mostly bone and air.
